Elisabeth M. Struckell

Assistant Professor of Practice

Dr. Beth Struckell joined the Cameron School of Business faculty in 2020, where she teaches the undergraduate core course in Competitive Strategy. She also leads Business Ethics and Entrepreneurship courses at both the undergraduate and MBA levels. Prior to her academic career, Dr. Struckell retired from a dynamic and successful 25-year tenure at PepsiCo. She later founded a thriving weight loss and longevity business in Texas before earning her Ph.D. in 2018 from the University of North Texas. Her research centers on organizational change, and she has published in leading journals including Academy of Management Perspectives, International Journal of Production Management, Journal of Knowledge Management, and Journal of Technology Forecasting and Social Change. Passionate about tracking megatrends, Dr. Struckell is recognized for integrating Wall Street Journal article discussions and project-based learning into her classroom.
She has served on numerous for-profit and nonprofit boards, including the Board of Trustees for the Kenan-Flagler Business School at the University of North Carolina at Chapel Hill, Air Liquide North America, and FM Global Insurance.

Specialization in Teaching

Dr. Beth Struckell specializes in Corporate Strategy, with a teaching portfolio that reflects her commitment to experiential learning and real-world relevance. She leads a project-based capstone course in Competitive Strategy, where students tackle evolving case challenges drawn from different industries and companies each semester. This dynamic format encourages strategic thinking and adaptability. Dr. Struckell also pioneered the Corporate Entrepreneurship course tailored for EBD undergraduate students, recognizing that few will launch startups immediately after graduation. Instead, the course equips them to identify entrepreneurial organizations and apply innovative thinking within established corporate environments. At the graduate level, she teaches Entrepreneurship and Business Ethics, fostering ethical leadership and entrepreneurial insight across both academic and professional contexts.

Research Interests

Dr. Struckell’s research focuses on organizational change, with a particular interest in how firms adapt to evolving strategic and structural challenges. Her work has been published in top-tier journals such as Academy of Management Perspectives, International Journal of Production Management, Journal of Knowledge Management, and Journal of Technology Forecasting and Social Change. She is also deeply engaged in tracking megatrends, exploring how large-scale societal, technological, and economic shifts influence organizational behavior and strategic decision-making.
